Some of the things I've made are pretty good substitutes for foods I could make without the limits of this diet. This lentil soup is not one of them. It's fine, but with onions, garlic and spices, diverse root veggies or maybe even coconut milk this could be something amazing. I just cooked lentils, carrots, diced/peeled zucchini in 6 cups water for 30 min. I also added salt and pepper. Once done I added sautéed broccoli, and cooked and seasoned white rice upon serving.
