Leek & Zucchini Omelet





This was pretty simple. I just put a good amount of ghee in a pan and sauted the leeks, whisked 2 eggs with 1 T water, poured the egg mixture over the leeks, julienned and separately sauted the zucchini, put zuchinni in omelet, seasoned, and ate.
